Dinner's In the Oven

Since I was feeling a little guilty about not cooking too much lately and the neighbors were obviously catching on and bringing us food I decided to make dinner the other night. This was labeled a Weeknight Favorite in one of my cookbooks.

Here is the recipe for Chicken & Rice Casserole:

1/2 cup chopped celery
1/4 cup chopped onion
2 garlic cloves, minced
Vegetable Cooking Spray
1pkg. sliced mushrooms
1 cup uncooked rice
1 10.5oz. Cream of Mushroom Soup
1 cup water
1 8oz. sliced water chesnuts
3 tbsp. parsley
1/4 cup dry sherry (optional)
6 skinned bone-in chicken breasts
1/2 tsp. salt
1/2 tsp. pepper

Saute first 3 ingredients in a large non-stick skillet coated with vegetable spray over medium heat for 5 minutes.

Add mushrooms and saute for 2 minutes.

Stir in rice and next 4 ingredients and sherry, if using.

Spoon into lightly greased 9x13 baking dish.

Top with chicken. Sprinkle with salt and pepper.

Bake covered at 350 for 1 hour or until chicken is done.

Serve with a side of Broccoli and WA-LAH! Dinner is Served.

Not your typical meat and potatoes dinner but the Mister still liked it!
