{Enchiladas Con Huevo}

Not one to pass up a good party, I’ve decided to participate in Simply Modern Mom’s Challenge.

Does it get any better than trying to come up with 365 recipes from all over the globe, our family favorites, our go-to’s when we just can NOT come up with anything else for dinner?

I’m in…with Enchiladas Con Huevo or Stacked Enchiladas.

What is a stacked enchilada you say? Instead of the regular stuffed and rolled traditional enchiladas their stacked counter-parts (commonly found in New Mexico) have the sauce and filling layered in between flat tortillas and topped with a fried egg! SO easy to make and I can’t even begin to describe the little dance that your mouth will make when the yolk mixes with the enchilada sauce and cheese. OLE!

 

Enchiladas Con Huevo

SERVES 4

Ingredients

  • 1 can red enchilada sauce
  • 1-2 cans tomato sauce
  • 1 can chopped green chilis
  • 2 1/2 teaspoons chili powder
  • 1/4 teaspoon ground cumin
  • 12 corn tortillas
  • 3/4 cup onion, finely chopped
  • 1 tsp. minced garlic
  • 2 1/2 cups mild yellow cheese, white cheese or goat cheese,  divided use
  • 4-8 eggs

Directions

  1. Heat  oil in skillet on stovetop. Add onion and garlic and saute until onion is soft.
  2. Add enchilada sauce, tomato sauce, green chilis, chili powder and cumin to the onion and garlic mixture and heat thru.
  3. In another skillet add enough oil to cover the bottom and heat. After oil has heated take a corn tortilla and dip into the oil, to make pliable.
  4. Take and dip the soft corn tortilla into the sauce mixture and cover well. Place onto plate (I usually add a little bit more sauce on the top) and then sprinkle with cheese.
  5. Repeat layers 2 more times, ending with cheese.
  6. Place your stacked enchilada in the oven on warm while you make the other plates.
  7. When all of the enchiladas are stacked take your eggs and fry them in the remaining hot oil on the stove.
  8. Place 1-2 eggs on top of the stack of enchiladas. ( I eat 1 on my stack; I put 2 on hubbies)’

I'm so glad you participated, I had such big plans for this but just couldn't take a photo of any of our meals that looked like something anyone else would want to eat :(
